Zuppa Toscana

Delicious! This is similar to the soup served at Olive Garden and is addictive! Great soup served with a salad and  garlic bread or homemade focaccia bread.

Delicious sausage and kale soup! This is a family favorite! I usually double the recipe!

Instructions
  1. Cook sausage and pepper flakes in a dutch oven until browned. Drain and set aside.
  2. In the same pan, cook the bacon until crisp. Remove bacon and leave a few tablespoons of bacon drippings in the pan. Cook diced onion in the drippings, add garlic and cook just a minute.
  3. Pour broth, water and boullion into pan with onion and garlic and bring to a boil. Add potatoes and cook until fork tender, about 15 minutes.
  4. Reduce heat and stir in heavy cream and sausage. Heat thoroughly. Mix in chopped kale. Stir in bacon or sprinkle on top of each bowl before serving.
Recipe Notes

This is such a satisfying soup! Of course you can omit the bacon if you are not into bacon and if you are doing low carb, just leave out the potatoes!
