When I was a little girl, in the springtime when the rhubarb was just coming up young and tender, my mother would cut off a stalk of this tart temptation and give me a little cup of sugar to dip it in. Thinking of the tartness and sweetness now makes my mouth gush!
This celery looking fruit has the most vivid color combination of pinkish red and lively green. For those who hadn’t ever tried it, like my husband, it can be a little scary but one bite of this rich and creamy pie will set your tastebuds into overdrive wanting more!
My mother would make the most wonderful Rhubarb Cream Pie that is a perfect Sunday afternoon dessert warm with a scoop of vanilla ice cream. Some of my other rhubarb favorites: Rhubarb Jam, Rhubarb Cake, Strawberry Rhubarb Pie.
