Mini Cheesecakes

Who loves cheesecake?! These little mini cheesecakes are so fun to make and everyone loves them! I made 122 last time and they were a huge hit  You can top them with whatever you want. For this party I made little blue white chocolate mermaid tails and white seashells to mix in with the fresh fruit. Have fun!

  1. Put 10 -12 cupcake liners in cupcake tin. Crush graham crackers with rolling pin until very fine. Mix together with melted butter and sugar. It will look like sand. Put 1 1/2 Tbsp of mixture into each cup and press down. Preheat oven 350 and bake 5 minutes.
Filling
  1. With electric mixer on high cream together cream cheese and sugar, abut 1 minute. Add sour cream, vanilla extract and lemon juice. On medium speed add the egg and beat just until combined. Divide between the cupcake liners onto the prebaked crusts. Bake 18-20 min until the edges are set and the center is a little jiggly. Place pan on cooling rack and cool 30 min. Transfer to refrigerator and cool at least 2 hours.
Decorate
  1. This is the fun part! I like to fill with a little bit of homemade strawberry jam, fresh fruit and little white chocolates. You can fill with anything or they are heavenly left plain.
