  1. Preheat oven to 350 degrees. Prepare a donut pan with nonstick spray.
  2. In a large bowl stir together almond flour erythritol, baking powder, cinnamon and sea salt.
  3. In a small bowl whisk together the melted butter, almond milk, egg and vanilla extract. Whisk the wet mixture into the dry mixture
  4. Spoon batter evenly into the donut pan, filling 3/4 full. Bake about 20-25 minutes, until golden brown. Cool donuts in pan until you can easily remove them.
  5. You may need to run a knife around the edges and center of each donut to remove carefully. Transfer to a cooling rack to completely cool.
Cinnamon Coating
  1. Brush each donut, one at a time, with the melted butter and dip/roll in the cinnamon/sweetner mixture to coat each donut.
Glazed Donuts
  1. Whisk together the powdered Sukrin Icing or other Erythritol powder (not granular) and heavy cream. Until desired consistency. If you make it a little thicker you can dip the top of the donut into the icing and if you have it a little thinner, you can drizzle the donuts.
  2. If you prefer non-dairy, use coconut cream with the powder for the icing.

Are you wondering what is Erythitrol? It is a natural sweetener that has a glycemic index of 0! Unlike other sugar alcohols that have a higher index and can upset your stomach, this particular sweetener does not. It is the byproduct of fermenting glucose from corn or birch and has little to no aftertaste.  No calories, No carbs and can reduce the absorption of fructose.  I have not found this product in the grocery stores and have only been able to purchase online, which is fine as it comes right away.  There are several brands out there and I have used and would recommend the Sukrin line.
