Keto Friendly Cheesecake
Amazingly delicious low carb cheesecake! No crust and very simple to make. You would never know that there is no sugar. This is a great substitute if you are looking for low/no sugar sweet treat. The key is using Erythritol zero calorie sweetener. Enjoy your cheesecake without the guilt!

Instructions
  1. Set your ingredients out of the refrigerator 30 min to an hour to get to room temperature. Prepare a 8 or 9 inch spring form pan. Lightly spray the bottom. Cut a circular piece of parchment paper and place in the bottom. Lightly spray the paper and sides of pan. Preheat oven to 350 degrees.
  2. Using a stand mixer or large bowl with hand mixer, beat cream cheese until fluffy (about 3 minutes). Add the sweetener, sour cream and vanilla. Beat.
  3. Gently add the eggs in one at a time, beating one minute after each one on low speed. Scrape sides and bottom of bowl and mix. Pour into the prepared pan. Place the cake pan onto a cookie sheet and place in the oven.

  4. Bake 45 minutes and turn off oven. Open the oven door and let set in the oven for 2 hours to cool down. Run a knife along the sides of pan if necessary and release the cake. Place onto a plate, cover and place in the refrigerator 12-24 hours before serving.
  5. Top with real whipping cream and fresh berries. I also added some homemade strawberry jam. Of course you can put fresh blueberries, blackberries or raspberries which are all fairly low in sugar. Be sure and use homemade whipping cream or the full fat real whipping cream in the can for the lowest sugar content.
