  1. Proof Yeast: Sprinkle yeast over warm water (110 degrees) stir, add 2 tsp sugar, quick stir to dissolve and let it set 5-10 min until foamy.
  2. Knead Dough: Pour yeast mixture into a stand mixer bowl, with dough hook attachment slowly add the flour, olive oil and salt. Increase to medium and knead for 5 minutes. Add a little more flour if it is sticking to the sides of bowl.
  3. First Rise: Remove dough from bowl and shape into a ball. Grease a mixing bowl with olive oil and place dough in bowl. Cover with plastic wrap and place in a warm location for 45 min to an hour. It should double in size.
  4. Second Rise: Place dough on a parchment lined baking sheet. Spread dough out into a rectangle, 1/2 inch thick pushing with fingers to shape. Cover with plastic wrap sprayed with nonstick spray. Let rise again about 20 minutes.
  5. Bake: Preheat oven to 400. Using fingers, poke deep dents all over the dough. Drizzle with 1-2 tablespoons of olive oil, sprinkle with fresh or dried herbs. Optional: In a small skillet saute minced garlic in a tablespoon of olive oil, drizzle garlic oil on dough. Bake 20 minutes.
  6. Sprinkle shredded parmesan cheese and a little fine sea salt on top. Bake a minute longer.
  7. Drizzle with a little more olive oil if desired; Slice and enjoy!!!
