Festive Sausage Cups

These scrumptious little cups are a tradition for our family gatherings especially during the holidays.  We make and serve them as appetizers and we can never seem to have any left over! You can add a little green and red pepper to create a “festive” look if you’d like.

  1. Cut each slice of bread with a 3 inch circle cutter. Roll each circle out with a rolling pin. Press each circle into a mini cup cake tin; press bottom and sides to form a nice cup.
  2. Bake in oven an 350 for about 7 min. You can make these several days ahead of time and place back into the bread bag until ready to use.
  3. Filling: Brown sausage in a skillet. Add green onions and cook until onions are translucent. (just a few minutes). Sprinkle in the 4 Tbsp flour and stir. It will be pasty. Slowly add the whipping cream and simmer 10 min until think, stirring often. This too can be made ahead and kept in the refrigerator until ready to use.
  4. Place warm sausage/gravy filling in each bread cup. Sprinkle with shredded parmesan cheese.
  5. Bake 10 min. Serve warm (but good at room temperature too!)
